Green Giraffe Trail Mix Cookies


  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, room temperature
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups Green Giraffe Trail Mix (a mix of nuts, dried fruits, and seeds)
  • 1/2 cup rolled oats
  • Optional: 1/2 cup chocolate chips or dried coconut flakes for added texture and flavor


  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, baking soda, and salt.
  3. In a separate bowl, cream the butter with brown and granulated sugar until fluffy. Beat in the egg and vanilla extract until well combined.
